Kick up your feet, dawn those Pit Vipers, pitch that umbrella and enjoy this summer sipper full of juicy tropical fruit notes.  Brought to us by the producer Wilton Benitez from the Granja El Paraiso 92 farm in Colombia, this 40 hour Anaerobic coffee is a specialty coffee lover's dream. 

These beautiful beans were processed with all the love and care of the farmers we love to showcase.  From the ground it was grown in, to the tanks where it's fermented, every step of this process was taken with care.  These beans were shipped to us, and roasted to a beautiful light roast profile and now we pass these glorious beans to you.

Granja Paraíso 92 is a family-owned project known for its innovative farming techniques. Located in Piendamó, Cauca, Colombia, near the equator, the farm benefits from optimal sunlight and elevation, enhancing the quality of its coffee.

    The advanced techniques used by Wilton in Granja Paraiso 92 like terraces, drip irrigation, shading, and laboratory nutrition monitoring to produce coffees through different processes such as washed, natural, honey, and anaerobic. The farm also boasts a state-of-the-art processing plant with a microbiology lab and quality lab. Wilton manufactures his own machinery, including fermentation tanks and drying machines. By employing bioreactors for controlled fermentation and using energy-efficient drying methods, Granja Paraíso 92 minimises its environmental impact, recycling water and avoiding fossil fuels. This commitment to innovation and sustainability makes their coffee truly exceptional.

    Here is the process they use for our current Anaerobic from Wilton.

    Process:

    Variety: Caturra (Silver)

    1. Manual harvest.

    2. Selection by density and size.

    3. Manual selection of only ripe fruits.

    4. Sterilization with ozonated wáter.

    5. Sterilization with ultraviolet light.

    6. We immerse the cherries in water at 70 degrees Celsius for 30 seconds.

    7. We pulp the fruits.

    8. We Sanitized again with an injection of ozonated wáter.

    9. We add a yeast

    11. Verification of Ph and brix degrees.

    12. 6 hours after the fermentation started, we check the pH of the mucilage if these data are not correct, we adjust the pH by adding citric acid or bicarbonate and the brix degrees are adjusted with honey produced from concentrated mucilage from previous batches.

    13. We ferment the fruits for 40 hours.

    14. We start drying at 38 degrees Celsius.
